This dish was inspired by fisherman's cuisine, where fresh seafood such as Madai caught off the coast of Oga is placed in a wooden barrel made of Akita cedar and heated with welded tuff, a volcanic rock. The essential stone for stone-grilled cuisine is a volcanic rock called "living stone" or "gold stone" in Oga. It is hard and difficult to break with no gaps inside, and has the characteristic of being able to withstand high temperatures and turn bright red like metal. In Akita Prefecture, there is a dish called "stone-grilled pot" centered around Oga City. It is made with ingredients centered around seafood and miso, and is said to have originated from fishermen eating the seafood they caught that day on the rocky beach.
